kk... let me rephrase my questoin:

If I set my PF to play as C on defence,

Does that mean the player starting as C (the C on offence) will take over as PF on defence automatically... or continue to play as C... effectively being a double team?

you have someone to assign on PF on defence, most likely the C had to do it(or he defends as SF and the SF takes the PF etc.)

You can try it at tactics page. You can not assign 2 players to one position. Thus you can not play double team. If you could and it would be forced guarding, then the player you would leave open would score every posession.
