Is it worth to buy an excellent coach? I mean, is the training progress much faster than a coach with lvl 3?

Depends on what you think is "worth". If you have piles of cash laying around you might find the little taster training worth it for your NT trainee, but for most lower league teams it's not the case if you ask me, certainly if your arena isn't complete yet.

My Arena is going to reach 25.000 Seats in 12 Days. So I guess, I've finished that on my shedule
My plan is to tank this season money and I got 3mio on my bank account.
My coach has now level 3 and I'm just paying 15k salary for him, so my thought was that if the gap between a lvl 5 and lv 3 coach is significant, then I'll invest in a new coach. But if it's not worth (for training) to spend round about 500k-1mio for a lvl 5 coach then I'm not going to change anything

Realistically, there is a difference but not one that is generally worth the prices the trainers are going for today. If you're training players who are very high potential and you're trying to max them out, you may need a higher level coach, but I think otherwise level 4 is quite adequate and if you already have a level 3 guy it's good enough there too.

You can get an advanced trainer with under 15k/week salary easily, so that's a worthwhile upgrade if you ask me. You can train NT players with 125-130 TSP with a lvl4, that's great already. The price gap to lvl5 is pretty big, I have one right now but I'm not sure I'll get another again. It makes quite an investment every 2 seasons otherwise they get really expensive.
