How good of stamina does all my players need to have to have a good full court press?

I personally wouldn't play Full Court Press at all, but if I did I would want all my players to have at least respectable stamina.
Unless your backups are of a similar standard to your starters then stamina isn't as important and you might get away with mediocre stamina.

Well I was just thinking of FCP because i've heard that it creates alot of turnovers.

It does, but from my experience it lowers my overall team defence ratings and I lose a lot of rebounds.
I think there are far better tactics you can use.

Keep playing Run and Gun. Your defence tactic should be based on your opponent though. Look at your next opponent and his past games, if he plays run and gun a lot then play a 3-2 zone against him. If he plays a neutral tactic then look at his inside and outside offence ratings and play a 3-2 zone if his outside attack is better or play man to man if his inside attack is better.
