Is their an attribute for athleticism. Can I judge how athletic my players are. How high they can jump, how fast, quickness, dunking ability? If not I think this would be a nice add to the game. A fan would be more willing to pay to see exciting plays and dunks, so it could it more attendance

Height is only important for training times, i.e. taller players learn inside skills faster and shorter players learn outside skills faster. All other player abilities are directly affected by their skill. So, to use your example of dunking ability, Inside Shot would be the closest thing to it.
